  • 1 cup (240g) almond butter
  • 1 cup (180g) pitted dates
  • 1/2 cup (60g) almond flour
  • 1/4 cup (60ml) honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking dish with parchment paper, allowing some overhang for easy removal.
  2. In a food processor, combine 1 cup (180g) of pitted dates, almond butter, honey, and vanilla extract. Process until smooth and well combined.
  3. In a medium mixing bowl, combine almond flour, baking powder, and salt. Stir well to distribute the baking powder evenly.
  4. Add the dry ingredients to the wet ingredients in the food processor. Pulse until the mixture forms a cohesive dough. If the mixture is too dry, add a tablespoon of water and pulse again.
  5. Press the dough evenly into the prepared baking dish. Use a spatula or your hands to spread it out smoothly and evenly.
  6. Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown and the center is set. The top should feel firm to the touch.
