Ingredients
- 1 cup (240g) almond butter
- 1 cup (180g) pitted dates
- 1/2 cup (60g) almond flour
- 1/4 cup (60ml) honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking dish with parchment paper, allowing some overhang for easy removal.
- In a food processor, combine 1 cup (180g) of pitted dates, almond butter, honey, and vanilla extract. Process until smooth and well combined.
- In a medium mixing bowl, combine almond flour, baking powder, and salt. Stir well to distribute the baking powder evenly.
- Add the dry ingredients to the wet ingredients in the food processor. Pulse until the mixture forms a cohesive dough. If the mixture is too dry, add a tablespoon of water and pulse again.
- Press the dough evenly into the prepared baking dish. Use a spatula or your hands to spread it out smoothly and evenly.
- Bake in the preheated oven for 18-20 minutes, or until the edges are golden brown and the center is set. The top should feel firm to the touch.
- Remove from the oven and allow to cool completely in the baking dish. For easier slicing, you can place it in the refrigerator for 15 minutes after cooling.
- Lift the cooled bars out of the dish using the parchment paper overhang, and slice into 16 bars. Serve and enjoy!
- Tip: Make sure to pack the almond flour into the measuring cup to ensure accurate measurement. This helps maintain the chewy texture of the bars.
- Tip: If your dates are too dry, soak them in warm water for 10 minutes then drain before processing.
