Ingredients

  • 120 g (1 cup) all-purpose flour
  • 50 g (1/2 cup) cocoa powder
  • 100 g (1/2 cup) granulated sugar
  • 100 g (1/2 cup) packed light brown sugar
  • 115 g (1/2 cup) unsalted butter, melted
  • 1 large egg
  • 5 ml (1 tsp) vanilla extract
  • 150 g (1 1/2 cups) sweetened shredded coconut
  • 200 g (1 1/4 cups) semi-sweet chocolate chips
  • 75 g (3/4 cup) chopped almonds

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Line a 9×9 inch baking pan with parchment paper, allowing the ends to hang over the sides for easy removal later.
  3. In a medium mixing bowl, whisk together the flour and cocoa powder until well combined.
  4. In a separate large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Stir until smooth.
  5. Add the egg and vanilla extract to the sugar mixture. Mix until fully incorporated.
  6. Slowly add the dry ingredients (flour and cocoa mixture) to the wet ingredients, stirring just until combined. Do not overmix.
  7. Fold in the shredded coconut, chocolate chips, and chopped almonds into the batter using a spatula.
  8. Spread the batter evenly into the prepared baking pan.
  9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  10. Allow to cool completely in the pan on a wire rack before lifting out and slicing into bars.
