Ingredients
- 120 g (1 cup) all-purpose flour
- 50 g (1/2 cup) cocoa powder
- 100 g (1/2 cup) granulated sugar
- 100 g (1/2 cup) packed light brown sugar
- 115 g (1/2 cup) unsalted butter, melted
- 1 large egg
- 5 ml (1 tsp) vanilla extract
- 150 g (1 1/2 cups) sweetened shredded coconut
- 200 g (1 1/4 cups) semi-sweet chocolate chips
- 75 g (3/4 cup) chopped almonds
Instructions
- Preheat your oven to 350°F (180°C).
- Line a 9×9 inch baking pan with parchment paper, allowing the ends to hang over the sides for easy removal later.
- In a medium mixing bowl, whisk together the flour and cocoa powder until well combined.
- In a separate large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Stir until smooth.
- Add the egg and vanilla extract to the sugar mixture. Mix until fully incorporated.
- Slowly add the dry ingredients (flour and cocoa mixture) to the wet ingredients, stirring just until combined. Do not overmix.
- Fold in the shredded coconut, chocolate chips, and chopped almonds into the batter using a spatula.
- Spread the batter evenly into the prepared baking pan.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs attached.
- Allow to cool completely in the pan on a wire rack before lifting out and slicing into bars.
