Ingredients

  • 150g unsalted butter (5.3 oz)
  • 200g dark chocolate, coarsely chopped (7 oz)
  • 250g granulated sugar (1 1/4 cups)
  • 3 large eggs
  • 5ml vanilla extract (1 teaspoon)
  • 95g all-purpose flour (3/4 cup)
  • 30g unsweetened cocoa powder (1/4 cup)
  • 1g salt (1/4 teaspoon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch (20×20 cm) square baking pan with parchment paper, leaving an overhang on the sides to lift the brownies out easily after baking.
  3. In a medium microwave-safe bowl or over a double boiler, melt together the butter and chopped chocolate, stirring every 30 seconds until smooth and combined. Allow this mixture to cool slightly.
  4. In a large mixing bowl, whisk together the sugar, eggs, and vanilla extract until smooth and slightly pale.
  5. Pour the melted chocolate mixture into the egg mixture and whisk gently until combined.
  6. Sift together the flour, cocoa powder, and salt. Gradually fold these dry ingredients into the wet ingredients using a spatula or wooden spoon, being careful not to over-mix.
  7. Pour the brownie batter into the prepared baking pan and spread evenly with a spatula.
  8. Bake in the preheated oven for 25-30 minutes or until the brownies are set on top and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  9. Allow the brownies to cool completely in the pan on a wire rack. After cooling, use the parchment paper to lift the brownies out of the pan. Cut into squares and enjoy.
