Ingredients

  • 1 cup (200 g) granulated sugar
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (140 g) whole almonds, toasted and chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the granulated sugar and butter using an electric mixer on medium speed until light and fluffy, about 3 minutes.
  3. Add the vanilla extract and eggs one at a time, beating well after each addition.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Use a spatula to fold in the chopped almonds.
  6. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet. Make sure to leave space between the logs for spreading.
  7. Bake for 20-25 minutes or until the logs are light golden brown. Remove from the oven and let cool slightly, about 10 minutes.
  8. Using a sharp knife, cut the logs diagonally into 1/2-inch slices. Arrange the slices cut side down on the baking sheet.
  9. Return to the oven and bake for an additional 10-12 minutes per side until golden and crisp. Let the biscotti cool completely on a wire rack.
