Ingredients
- 1 cup (200 g) granulated sugar
- 1/2 cup (115 g) unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 1/4 cups (280 g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup (140 g) whole almonds, toasted and chopped
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together the granulated sugar and butter using an electric mixer on medium speed until light and fluffy, about 3 minutes.
- Add the vanilla extract and eggs one at a time, beating well after each addition.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Use a spatula to fold in the chopped almonds.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide on the prepared baking sheet. Make sure to leave space between the logs for spreading.
- Bake for 20-25 minutes or until the logs are light golden brown. Remove from the oven and let cool slightly, about 10 minutes.
- Using a sharp knife, cut the logs diagonally into 1/2-inch slices. Arrange the slices cut side down on the baking sheet.
- Return to the oven and bake for an additional 10-12 minutes per side until golden and crisp. Let the biscotti cool completely on a wire rack.
