Ingredients

  • 200g (1 3/4 cups) all-purpose flour
  • 100g (3/4 cup + 2 tbsp) almond flour
  • 100g (1/2 cup) granulated sugar
  • 240g (1 cup) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 60g (1/2 cup) powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3 minutes using an electric mixer on medium speed.
  3. Add the vanilla extract, almond extract, and salt to the butter mixture. Mix until well combined.
  4. Gradually add the all-purpose flour and almond flour to the bowl, mixing on low speed until fully incorporated. The dough should be soft but not sticky. If it is too sticky, you can add a little more all-purpose flour, one tablespoon at a time.
  5. Scoop a tablespoon of dough and roll it into a ball using your hands. Then shape it into a crescent moon by gently rolling the ends thinner and bending it into a curve.
  6. Place each crescent on the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake the cookies in the preheated oven for about 12 to 15 minutes, or until the edges are just starting to turn golden brown. Be careful not to over-bake as they can become dry.
  8. Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
  9. Once the cookies have cooled, generously dust them with powdered sugar. For a finer coating, you can sift the powdered sugar over the cookies.
  10. To enhance the almond flavor, toast the almond flour slightly before using it in the recipe. Spread it on a baking sheet and toast at 350°F (175°C) for 5 minutes.
