Ingredients
- 1 cup (226g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 1/4 cups (290g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) salt
- 1 cup (240ml) shredded sweetened coconut
- 1 1/2 cups (265g) semisweet chocolate chips
- 1 cup (150g) chopped almonds
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes. An electric mixer works well for this step.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the shredded coconut, chocolate chips, and chopped almonds until evenly distributed throughout the dough.
- Using a tablespoon or a cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden around the edges.
