Ingredients

  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) light brown sugar, packed
  • 1 large egg
  • 1 teaspoon (5 ml) vanilla extract
  • 1 and 1/2 cups (190 g) all-purpose flour
  • 1 teaspoon (5 g) baking powder
  • 1/2 teaspoon (2.5 g) baking soda
  • 1/2 teaspoon (2.5 g) salt
  • 1 teaspoon (2 g) ground cinnamon
  • 1 cup (100 g) peeled and diced apple (preferably Granny Smith)
  • 1/2 cup (60 g) chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar with an electric mixer on medium speed until the mixture is light and fluffy.
  3. Add the egg and vanilla extract to the creamed butter mixture and beat until fully incorporated.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined.
  6. Gently fold in the diced apples and walnuts (if using) with a spatula.
  7. Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  8. Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges.
