Ingredients
- 1/2 cup (113 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 1/4 cup (50 g) light brown sugar, packed
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 1 and 1/2 cups (190 g) all-purpose flour
- 1 teaspoon (5 g) baking powder
- 1/2 teaspoon (2.5 g) baking soda
- 1/2 teaspoon (2.5 g) salt
- 1 teaspoon (2 g) ground cinnamon
- 1 cup (100 g) peeled and diced apple (preferably Granny Smith)
- 1/2 cup (60 g) chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar with an electric mixer on medium speed until the mixture is light and fluffy.
- Add the egg and vanilla extract to the creamed butter mixture and beat until fully incorporated.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined.
- Gently fold in the diced apples and walnuts (if using) with a spatula.
- Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
- Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a cooling rack to cool completely.
