Ingredients

  • 200g (1 3/4 cups) all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 115g (1/2 cup) unsalted butter, softened
  • 150g (3/4 cup) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 120ml (1/2 cup) buttermilk
  • 240g (2 cups) powdered sugar
  • 2 tablespoons light corn syrup
  • 70ml (1/4 cup) water, approximately
  • 60g (1/2 cup) unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, beating until combined.
  5. On low speed, add the dry ingredients to the wet mixture in two additions, alternating with the buttermilk. Mix until just combined.
  6. Using a spoon or a small cookie scoop, drop about 2 tablespoons of batter per cookie onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 16-18 minutes, or until the edges are just turning golden and the cookies are firm. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, in a small saucepan over low heat, combine the powdered sugar, corn syrup, and enough water to achieve a thick but spreadable consistency. Stir until smooth.
  9. Transfer half of the glaze to another bowl and whisk in the cocoa powder and vanilla extract. Adjust consistency with a bit more water if needed.
  10. Using a spatula, spread vanilla glaze on one half of each cookie and chocolate glaze on the other half. Let the glaze set at room temperature.
  11. Allow the cookies to sit until the glaze is fully set, about 30 minutes, before serving.
