Ingredients
- 200g (1 3/4 cups) all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 115g (1/2 cup) unsalted butter, softened
- 150g (3/4 cup) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 120ml (1/2 cup) buttermilk
- 240g (2 cups) powdered sugar
- 2 tablespoons light corn syrup
- 70ml (1/4 cup) water, approximately
- 60g (1/2 cup) unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar until light and fluffy, about 3 minutes.
- Add the egg and vanilla extract to the butter mixture, beating until combined.
- On low speed, add the dry ingredients to the wet mixture in two additions, alternating with the buttermilk. Mix until just combined.
- Using a spoon or a small cookie scoop, drop about 2 tablespoons of batter per cookie onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 16-18 minutes, or until the edges are just turning golden and the cookies are firm. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the glaze, in a small saucepan over low heat, combine the powdered sugar, corn syrup, and enough water to achieve a thick but spreadable consistency. Stir until smooth.
- Transfer half of the glaze to another bowl and whisk in the cocoa powder and vanilla extract. Adjust consistency with a bit more water if needed.
- Using a spatula, spread vanilla glaze on one half of each cookie and chocolate glaze on the other half. Let the glaze set at room temperature.
- Allow the cookies to sit until the glaze is fully set, about 30 minutes, before serving.
