Ingredients
- 2 cups (200g) almond flour
- 1 cup (200g) granulated sugar
- 2 large egg whites
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup (48g) maraschino cherries, drained and halved
- 1/4 cup (25g) powdered sugar, for dusting
Instructions
- Preheat your oven to 300 degrees Fahrenheit (150 degrees Celsius). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, granulated sugar, and salt until well combined.
- In a separate bowl, beat the egg whites with a hand mixer until they form stiff peaks.
- Gently fold the beaten egg whites into the dry almond flour mixture using a spatula. Add almond extract and vanilla extract; mix until a smooth dough forms.
- Scoop a tablespoon of dough and flatten it slightly in your hand. Place a cherry half in the center and gently close the dough around it, forming a ball.
- Repeat this process with the remaining dough and cherries, placing each ball on the prepared baking sheet, spaced about 2 inches apart.
- Dust the top of each cookie ball with a little powdered sugar using a sieve or fine mesh strainer.
- Bake for 35-40 minutes, or until the cookies are lightly golden and firm to the touch.
- Remove cookies from the oven and let them cool completely on the baking sheet before serving.
