Ingredients
- 250g all-purpose flour (2 cups)
- 100g sugar (1/2 cup)
- 50g honey (2 tablespoons)
- 50ml water (1/4 cup)
- 30ml olive oil (2 tablespoons)
- 25g unsweetened cocoa powder (1/4 cup)
- 5g baking powder (1 teaspoon)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground clove
- 1/4 teaspoon nutmeg
- Zest of 1 orange
- Pinch of salt
- 50 grams chopped almonds (1/2 cup)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent the cookies from sticking.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, cinnamon, clove, nutmeg, and salt. Make sure all the dry ingredients are well combined.
- Grate the zest of one orange finely and add it to the dry ingredients, mixing it thoroughly for that fresh citrus aroma.
- In a separate bowl, mix the honey, water, and olive oil. Stir this liquid mixture into the dry ingredients until a dough forms. It may be slightly sticky, but should hold together well.
- Fold in the chopped almonds, ensuring they are evenly distributed throughout the dough.
- With your hands, take small portions of dough and form them into oval-shaped cookies about 1/2 inch thick. Place them evenly spaced on the prepared baking sheet.
- Bake in the preheated oven for about 20-25 minutes, or until the tops are firm and slightly cracked. Baking time can vary with oven types, so keep an eye on the first batch.
- Remove from the oven and let them cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Cooling on a rack will prevent the bottoms from becoming soggy.
- Once the cookies are completely cool, sift powdered sugar lightly over their tops for an attractive finish. Store them in an airtight container to maintain their freshness.
