Ingredients
- 1 cup (2 sticks or 226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups (375g) all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (125g) smooth almond butter
- 1 cup (125g) powdered sugar
- 2 tablespoons (30ml) milk
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This will take about 3-4 minutes.
- Add the egg and vanilla extract to the creamed mixture. Beat until well incorporated.
- Gradually add the flour and salt, mixing until you form a dough. If it becomes too difficult to mix with a spoon, use your hands to bring the dough together.
- Roll the dough out to a thickness of about 1/4 inch (0.6 cm) on a lightly floured surface. Use a cookie cutter to cut out shapes and place them onto the prepared baking sheet.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. Keep an eye on them to avoid overbaking.
- Remove cookies from the oven and transfer them to a cooling rack to cool completely.
- While cookies are cooling, prepare the filling. In a bowl, mix the almond butter, powdered sugar, and milk until smooth and creamy.
- Once cookies are cool, spread a layer of the almond butter filling on the flat side of half of the cookies. Place another cookie on top to form a sandwich, pressing gently.
