- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer at medium speed.
- Add the egg and vanilla extract to the bowl and beat until combined.
- In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix, as this can make the cookies tough.
- Drop tablespoons of dough onto the prepared baking sheets, about 2 inches apart. Use the back of a spoon to flatten each cookie slightly.
- Bake for 12-15 minutes or until the edges are set. The centers may look slightly underbaked.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
- While the cookies cool, whip the heavy cream with the powdered sugar until stiff peaks form. Be careful not to over-whip, or the cream will turn into butter.
- To assemble the sandwiches, spread about a teaspoon of cherry preserves over the bottom of half the cookies. Spread or pipe whipped cream over the cherry preserves.
- Top with the remaining cookies to form sandwiches. Press gently to adhere.
- Refrigerate the cookies for 30 minutes before serving to allow the filling to set.
