  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer at medium speed.
  3. Add the egg and vanilla extract to the bowl and beat until combined.
  4. In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix, as this can make the cookies tough.
  6. Drop tablespoons of dough onto the prepared baking sheets, about 2 inches apart. Use the back of a spoon to flatten each cookie slightly.
  7. Bake for 12-15 minutes or until the edges are set. The centers may look slightly underbaked.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
  9. While the cookies cool, whip the heavy cream with the powdered sugar until stiff peaks form. Be careful not to over-whip, or the cream will turn into butter.
  10. To assemble the sandwiches, spread about a teaspoon of cherry preserves over the bottom of half the cookies. Spread or pipe whipped cream over the cherry preserves.
  11. Top with the remaining cookies to form sandwiches. Press gently to adhere.
  12. Refrigerate the cookies for 30 minutes before serving to allow the filling to set.
