Ingredients
- 1 cup (125 g) all-purpose flour
- 1/4 cup (25 g) unsweetened cocoa powder
- 1/2 teaspoon (2.5 g) baking powder
- 1/4 teaspoon (1.25 g) salt
- 1/2 cup (115 g) unsalted butter, softened
- 1/3 cup (67 g) granulated sugar
- 1/3 cup (67 g) brown sugar, packed
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 1 tablespoon (15 ml) coffee liqueur
- 1/2 cup (120 ml) prepared vanilla custard
- 1/2 cup (90 g) semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and smooth.
- Add in the egg, vanilla extract, and coffee liqueur to the sugar-butter mixture. Mix thoroughly until combined.
- Gradually incorporate the dry ingredients into the wet ingredients. Mix until you have a smooth dough.
- Place tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are firm. Let cool completely on a wire rack.
- Once the cookies are cool, spread a spoonful of vanilla custard on the flat side of one cookie and sandwich it with another cookie.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth.
- Drizzle or dip the cookie sandwiches in the melted chocolate. Let them set on a wire rack until the chocolate hardens.
